Ingredients for 4 servings:
For the sauce:
No.4: Slices of pork jowl bacon (Guanciale)
 No.4: Eggs
120 g: Pecorino Romano cheese
To taste: Salt
To taste: Black pepper
Preparation:
  • Cut the jowl bacon into strips and let it brown for about 20 minutes on a low heat
  • Cook the pasta; in the meantime, put the eggs into a bowl, add the Pecorino cheese and some pepper, stir the mixture with a whisk
  • Put the cooked pasta in a frying pan, turn off the heat and add the egg and Pecorino mixture
  • Serve with the crisp jowl bacon
