Fettuccine with Pumpkins and Olives

Ingredients

  • Fettuccine pasta 200g
  • Green olives
  • Pumpkin 180g
  • 1 Scallion
  • Thyme leaves
  • Romeo Extra Virgin Olive Oil
  • SaltPreparation

Preparation

  • Slice the scallions, diced pumpkin and fry together in Extra Virgin Olive Oil for a few minutes.
  • Cover with water, add thyme leaves and simmer until the pumpkin is creamy.
  • Take off the heat put in the olives. In a large pot bring to boil 2 liters of water.
  • Cook the Fettuccine pasta.
  • Save a cup of water from the pot and amalgamate the pasta in a pan with the water and sauce.
