MUSHROOM RISOTTO

Ingredients

60 gr. of rice

30 gr. of mushrooms

10 gr. of butter

1 chopped onion

salt

Vegetable stock

Parmesan cheese

Parsley

Directions

Put the butter, the chopped onion in a pan and add sliced mushrooms.

Sauté everything together and add the rice, brown for few minutes over high heat, turn down the heat and start adding ladles of your stock. Continuously stir for 20 minutes. When all of it is cooked , remove it from the fire.

Add butter, parmesan and parsley. Stir rapidly then serve.
